This change can be done on the "pricelist settings" screen, which means that you will have to search for it and select it.

You can rename the price list by clicking on "rename pricelist" next to the pricelist's name.

Enter the new name and click on "save".

For security reasons, the ability to delete a pricelist has not been enabled.
